Almond Milk Recipe

Here's my favorite almond milk recipe. You can vary it by adding an apple and using more or less water (depending on your need for thickness).

Makes 2-1/2 cups

2-1/2 cups water
1-1/2 cups soaked almonds*
3 pitted medjool dates, soaked*
1/2 teaspoon vanilla extract (optional)

*Soaking: Cover the ingredient with filtered water and let soak overnight.

Blend 1-1/2 cups of the water with the almonds, dates and vanilla on high speed until very smooth. Add the reminding 1 cup of water and blend until smooth.

Using a fine mesh strainer, pour the almond mixture through, allowing the milk to flow into a bowl. Use a spatula to stir and press the pulp that is caught in the strainer to extract as much liquid as possible. Throw away the pulp and store your milk in a sealed container in the refrigerator. Shake well before using - it should keep for 5 days.

It's that easy! You can use organic ingredients and purchase your almonds in bulk. This is a fabulous recipe for folks who want to save money on buying containers of milk. It's a perfect liquid for smoothie recipes.
