Sesame Milk Recipe

You'll enjoy this sesame milk recipe which is a great alternative to cow's milk!

Makes 2-1/2 cups

2-1/2 cups water
1-1/4 cups soaked, unhulled sesame seeds*
3 pitted medjool dates, soaked*
1/2 teaspoon vanilla extract (optional)

*Soaking: Cover these ingredient with fresh water and soak them overnight on your kitchen counter. Any bowl will do for a container.

Blend 1-1/2 cups of the water with the soaked sesame seeds, soaked dates and vanilla on high speed until very smooth. Add the reminding 1 cup of water and blend until smooth.

Using a fine mesh strainer, pour the almond mixture through, allowing the milk to flow into a bowl. Use a spatula to stir and press the pulp that is caught in the strainer to extract as much liquid as possible. Throw away the pulp and store your milk in a sealed container in the refrigerator. Shake well before using - it should keep for 5 days.
